I don't think you need to turn it off:

Starting in Firefox version 135, the “Do Not Track” setting has been removed. Many sites do not respect this indication of a person's privacy preferences and, in some cases, it can reduce privacy.

I know it's being ignored by most sites, but I'm being prevented from seeing data I need to access due to 'Do Not Track' being 'On'. So yeah, need to turn if off..

As stated, Firefox does not send "Do Not Track" request starting from version 135. It makes use of Global Privacy Control (GPC) instead. Please see this article for details.
