I have some default text on some of my emails hat needs changed
A couple of years ago I somehow added a phrase on my emails. It read "PLEASE NOTE MY NEW EMAIL ADDRESS". Now I'd like to change or delete it but can't find out where in Thunderbird to do it. Any help would be appreciated.

Look at Account settings the first view.
I found it as an HTML document named "MySignature.html.. When I open it in Word, only my name and number are shown there. When I open it in Firefox the same name and number show but the Tab is named PLEASE NOTE MY NEW EMAIL ADDRESS.
That message appears sometime when I forward an email and at the very top of a page if I print an email that I've sent. Any idea how I can get rid of the message all together?
Check if the "Attach a signature..." box, as shown in the previous screenshot is set to link to the file you found. And check this in each of your accounts in Thunderbird; each account can have its own separate signature.
It sounds to me as if the "Please note..." message is the title of the html document. Open your html file in Notepad to see its full contents.
