Does this only happen sometimes?

The next time it happens, type about:profiles in the Firefox address bar. If you see two profiles listed, click the Launch profile in new browser under the other profile and see if your regular data is in there. If it is, set that profile as the default.

Recently, a lot of users have reported issues where Firefox creates a new blank profile for them.

SIDENOTE: You don't appear to be running the latest version of Firefox. A few critical security issues where fixed in Firefox recently, so I highly recommend that you update to the latest version of Firefox (67.0.4).

Hmm, no...there is only one profile and my Firefox is up to date.
