why am i getting updates to firefox everyday

So not quite everyday. In best case there are no minor updates or only one however sometimes a minor update is requires to fix security and or security concerns. The Firefox 140, 128, 115 on page are ESR versions as to why there are even more updates.

Now if you were to test the Firefox on the unstable Nightly channel builds then you would get updates twice a day in testing.

Not every day, but twice a week these days (which is a double of normal releases planned) due to updates that cannot wait. That's mainly security patches, and crashes due to flawed CPUs.

(Usually if you're not up to date, as your version shows, you won't get every single update along the way, but usually the new rollout replaces the previous one, so once it's known there will be a next version out soon, the old ones stop shipping.)
