I have made a decision on which theme & colors I want to use and have set it for default. However, whenever open my browser I have to change it to my default. Why do I have to change every time? Thanks

Disable your extensions, start with anything related to themes. Dark Reader has a setting that alters the browser theme for example (Dark Reader > More > Change the browser theme > Default).
