How can I lock my computer so that Firefox ABSOLUTELY NEVER updates?

I've had Setting> Advanced > Firefox Updates > Check for Updates > Never check for updates for years.

About a month ago, by accident (may daughter logged in to my computer on an account that she had't visited for years) Firefox updated. It's created havoc -- even Microsoft Word had to be reinstalled. I've easily lost two days of billable work over the last month trying to rebuild a stable workable configuration.

1. Is there a way to set something so that Firefox will POSITIVELY NEVER EVER EVER update? Can I set some file to some protected mode? Can I delete something? There hasn't been a feature added in about a decade that buys me anything that's worth a risk of 10 minutes of down time. I have deadlines that absolutely do not move, and I cannot afford the unpredictability of updates.

2. If I'm going to lock to some version, is there an "extended extended extended support" version that you recommend? Ideally, it'd be one that still gets security updates (like Windows XP did for many years, and for some security issues, even after the announced end of life in 2012), but I don't need that. I just need stability. Absolute, Rock of Gibraltar stability.

1. In newer versions, probably including Firefox 60 ESR, there is a method to block Firefox from checking for ALL updates using a Policy file. That did not exist in Firefox 52 ESR. See: Customizing Firefox Using policies.json and numerous other recent threads about updates. Not recommended for users who are not attentive to security issues.

2. Firefox 60 ESR will only get security updates until the next major release. I don't know of a way to avoid the major release, however; checking for updates works the same way for both kinds of updates. This page has a timeline: https://www.mozilla.org/firefox/organizations/
