In the Firefox app browser, if I click or tap on an website’s email or “Mailto” link that opens my Mail app, does Firefox share my email address with that website?

Hi, No. The website can detect that you clicked on the link, but when you switch over to your Mail app, everything that takes place in that app is outside of the view of the webpage -- and out of the view of Firefox, too.
