I have just bought a present for my wife on a site and want to clear all evidence. I have deleted the recent history but when i put www into the toolbar at the top the name of the site still comes up - how do i clear that? thanks

You can remove all stored data from a specific domain via "Forget About This Site" in the right-click context menu of an history entry (Show All History or History sidebar).
That will remove everything from that server like bookmarks, cookies, passwords, cache, history, and exceptions, so be careful if you need to keep passwords or other data from that site.
