I found instructions on how to disable a preinstalled quick search engine in Firefox for iOS but I cannot find how to delete one of the preinstalled engines. I believe preinstalled engines could be proposed but in the end, the user should be in control of those.

unfortunately you can't delete them, only disable them. I assume this is a feature that was implemented to prevent people from deleting all of their search engines then having to manually add them back (or reinstall firefox to restore them or something similar)
