Your Thunderbird software update feature should be disabled and or set to another feature. This is possible to enter for your Thunderbird Software. You might try setting app.update in config editor to false. Also set in settings>general

Yes, but I want to block the update server. I don't trust Thunderbird an inch since it updated even though I set the options to "notify only".
