I get the screen "Welcome to Freedom" every time I open Thunderbird. I am unable to delete this and it is annoying. Any suggestions?

That welcome screen also has a DONATE button to support ongoing development and maintenance. The screen can be removed at settings>general

I went to settings>general and I don't know what to do. Should I enter something in the start page box? Is so, what should I enter?

Just untick the start page and you'll be done. :)
