I agree that is something that needs to be documented; I have answered that same question a few times, and don't use Sync for anything except "playing with it" on the same PC in multiple, separate Profiles. (I get a perverse pleasure when deleting bookmarks in one Profile and then watching them disappear from another Profile after triggering a manual Sync!)
Another Sync article that I can't find in the KB is an explanation of what Firefox does and doesn't do - or an article about What is Firefox Sync?
I am 'big on' the "What is ...." title for support articles about features and explaining those features.

Firefox Sync is a browser synchronizer "system" which allows users to keep their Firefox web browser configured in the same way on different computers, devices, and operating systems. For instance, if a user adds a bookmark while being at home, the bookmark will be available the day after at office; along with many other types of personal data.
This KB article is close, but there is no mentions made that Sync isn't a backup service for one device, in case the user is re-formatting their hard drive. Something we see every week in the forum, and sometimes even daily.
