Help says I'm on v55 (windows 10, 64bit) 

but FF keeps interrupting with 'Update to 55?'
I am on beta channel and previous to the last update I believe I was on 55.02b...
so, when I 'Updated to 55' I thought I was going to a general release, but the general release available seems to be 54.

Firefox 55 beta in currently in the release candidate state and thus show without a 'bxx' number on "Help -> About". There have been a few release candidates during the past week (current is RC3), so you can still see a possible update offered. The Firefox 55 release is scheduled for next Tuesday.
