When I download something it used to have 2 options, Open, and Save, and underneath was a check box saying "do this for every file like this" or something, I checked it but I've changed my mind, I want the option to either Open and Save it again, how do I do this?

You can look for that action in Tools > Options > Applications and set it to "Ask me".
