Assuming that I don´t want any Google server to track me what could I click in the attached? It's a nice feature but as it is not clear what the last three options do a bit of a guess.

You received an HTML newsletter email message which pulls remote content (presumably images and fonts) from the 5 URLs listed in your screenshot. If you want to see the images you ca allow the listed URLs individually, or with a single click (allow all 5 origins). With the last option you whitelist pulling remote content in messages sent from that particular email address. Up to you to do what you want.
