- in 'account settings' pane, highlight the account to be the default - then, scroll down the left side to the 'account actions' menu and select 'make default'.

Note, the default address is only used when no account is highighted at the time you click 'new message. If you have another account highlighted in folder pane when you click 'new message' thunderbird assumes that is to be the sender.
