Incoming e-mails text color different

I am using Thunderbird 78.0.1. I changed the signature text colour for incoming e-mails to white. But for it to apply, I had to change the colour settings to change the colour setting: Override the colours specified by the content with my selections above to always - with text colour white and background colour black. Because of that if I get an email that has text in a colour other than white, I still see the text in white. I also tried changing themes, but no luck.

Is there a way to balance both?
