Norton seems to be messing up my emails.
I know I can tell it not to scan incoming emails. I would also like to tell Norton which folders not to scan. Can someone give me a list of the folders which can be affected by a Norton scan?

On Thunderbird's help menu is a troubleshooting entry. Click it. In the troubleshooting information is a show profile button. Click it.
That is the root folder of your Thunderbird profile. That and everything below it can be very badly affected by anti virus product and on access scanning (real time) is a bad thing as the files involved are often very large taking many minutes to scan.
Last I heard, Norton's could not scan IMAP mail accounts or POP mail accounts that used SSL/TLS That basically says Norton's can not scan incoming mail. There are very few mail connections these days that are POP without SSL/TLS. So your risk increase from turning it's scanning off is very negligible.
Do not allow an automatic fix of any "threats" found in the profile. The product just deletes the entire mail folders contents in it's somewhat futile attempts to remove a harmless text file.
Norton's SONAR makes the Thunderbird account wizard non functional. it intercept the probes to set up accounts
Norton's Firewall is well know for blocking Thunderbird accessing the internet (especially post Thunderbird update every six weeks.)
