Emails come through with headers only, no body even though the body exists on the server. Other times, the message comes through as pure text gibberish.
I frequently get emails that come through only with the headers and no body message at all, even though the server contains the whole message. Further, numerous time the body message come through as only lines of text without pictures, etc., again even though the server has the complete message.
In addition, this problem doesn't just happen with the same web site or email source. Messages from the same source frequently come through just fine.

In all probability your issue will be fixed by creating an exception for the Thunderbird profile in McAfee.

If those images contain remote content then they will be blocked by default to safe guard your privacy. In which case you should see this message below the header info. 'To protect your privacy, thunderbird has blocked remote conten in this message' There will also be an 'Options' button, which offers you various options to allow those blocked images, but be wary, malware may be present.
Note: emails labelled as Junk appearing in the Junk folder, will not show the message and not allow display of those images. The email would need to be verified as Not Junk first.

What Anti-Virus product are you using? Do you have any Anti-Virus product scanning your incoming emails? If yes, then suggest you stop scanning incoming mail. Remote images are not displayed by default. Any attachment you open using appropriate software should still get scanned. Do not use 'View' > 'Display attachments inline' by default. Checking it lets you view embedded images inline, rather than as attachments. However, its a security risk since you've lost the ability to avoid opening a malicious attachment.
Are you using an Imap or Pop mail account?
When you see headers, but no body, are these emails in the Inbox or have they been moved to another folder?
For the emails without a body message, there is no message from Thunderbird and No "options" button. Some of the web sites sending emails that show in text only will have a bunch of links at the bottom. At other times, the email displays correctly.

Thanks everyone, for the help. I'll work on these suggestions over the next week and will post if the problem still exists.
