Where do I find ALL settings information for DNS over HTTPS, which is currently incomplete?

You don't list the format of the setting to use another DNS server (rather than Cloudflare). Does one type in the IP address of the server that one wants to use as their Custom DoH server, or do you type in the name? Can you use more than 1 server address and if yes, what's the format? Perhaps you can now see why your help file doesn't help...none of this info is in it! :(
