I run my own DNS and its managed locally. And while I can move it back manually, I keep finding the setting changed. So I need to find out how I can get control of my machines, OR I have to yank FF from every machine at the house. What can I do to force the machines to use MY DNS and not bypass the security I have put in place.

Having to go to each machine and do this weekly is not a good idea.

Do you mean that DNS over HTTPS gets enabled causing the DNS server setting to get modified ?

@cor-el Thanks but that really missed the point: I am having to go in and change the DoH setting every few days in some cases. That doesnt work. I did see the canary check as an option, but I dont feel that this is really well documented so that a fair novice can address that. I am planning to work that this weekend. While DoH can be a security step in some cases, it is not a one-size fits all. It seems that this is designed to bypass the local DNS setup and go strictly to the DoH server established by the vendor. I will attempt to use the FAQ/DoH discussion and see if I can do this. Barring that, I may try to block Cloudflare and NextDNS at the firewall. However, is it worth the squeeze? When a company makes a decision of what is right for me and doesnt give me a lot of room to work without major hassle, perhaps its time to move to a diff browser.

Firefox shouldn't change the setting on its own after the user turns it off.

Perhaps there is a problem with some loss of settings from time to time. You could check this article: How to fix preferences that won't save.

Or perhaps this is a problem with other hands on those keyboards changing the setting? In that case, either a Policy or blocking might be necessary.
