Safari has not been supported by Apple for a while and Chrome's updates will end April 2016 so I just wished to know how long Mozilla plans to provide updates to Firefox on Mac OS 10.7.5

There are currently no plans to discontinue support for this operating system. However, Mozilla will eventual discontinue it.

Please note, Mac users on your operating system should be able to update to Mac 10.11 free of charge.

I don't think Mozilla actually "plans" for ending support for each specific operating system ahead of time based upon age or EOL status. Support will end when the 'roadmap' for further Firefox development hits a 'wall' where continued support of an old operating system would limit or prevent the introduction of a feature that the newer OS versions will handle, but would 'break' Firefox on an older OS.

With the old PPC Mac OS's, Firefox was a dual PPC / Intel build for awhile. And with Mozilla doing a 32/64 bit dual version for the Intel platform, the support for PPC ended. IMO, a triple build (PPC + Intel 32/64) to continue with PPC would have made for a 100MB+ download of Firefox, if that would have even been a workable "solution".

On Windows, support for Windows2000 ended when Mozilla wanted to switch to a newer MS "redistributable" for building Firefox for Win7 features (iirc), and the newer MS "redistributable" didn't support Windows OS's before WinXP. And as of earlier this month, Mozilla ran into an issue with WinXP and Visa (that doesn't have the correct 'patch') where people wanting to install Firefox 43.0.1 or higher need to install Firefox 43.0 and allow Firefox to update to have the latest 'chem-spill' security release versions. There's an issue with SHA1 being deprecated and keeping WInXP and some Vista users from directly installing the latest version. This may be "the end" of WinXP being supported, unless Mozilla can come up with a "work-around".

Bottom line, IMO it isn't really "planned" it "happens" due to the circumstances at the time it happens. And maybe there is 18 weeks 'notice' provided before it does happen.

On 5/5/16 I got message on my Mac Mini running OS X 10.7.5 that I cannot update to current version of FF unless I update to a later version of OS X. This appeared to come from Mozilla, but when I checked my FF version today (5/6/16), the dialog box says that I have current version (46.01). Which information is correct?

The current Firefox release should still work on Mac OS X 10.6-10.8 according to the System Requirements.

If you can't get it to work then you can consider to switch to the ESR update channel. Firefox 45.1.1 ESR:

That message for Mac users was a brief hiccup as it was intended for the Nightly channel only which is where the Firefox 49.0 is on as 49.0a1.

Support for Mac OSX 10.6. 10.7, 10.8 is being dropped as of Firefox 49.0 Release (Sept 13) as the minimum supported then will be Mac OSX 10.9.

Once Firefox 49.0 is Released the Mac OSX 10.6. 10.7, 10.8 users going to http://www.mozilla.org or http://www.mozilla.org/firefox/all/ will likely be directed to the Firefox 45 ESR as the current version then will be 45.4.0 esr in line with Fx 49.0 Release. Those 10.6. 10.7, 10.8 users doing Release updates when Fx 49.0 is Released will get a support article at support.mozilla.org explaining their options.

Firefox 45 ESR will be supported until 45.8.0esr (out when Firefox 53.0 is released) unless it gets an extension.
