I've now tried twice to install and sign up using the Thunderbird macOS app, but after the app opens, I noticed it autofills my  id... Not sure if that has anything to do with it but from there I click sign up, fill out the rest of the form just before it freezes and displays an "app not responding" note in my desktop dock.

What do i need to do from here?

Where did you download your Thunderbird copy from? If you install the Thunderbird Mac version and launch it for the first time you should see an "Account Setup" tab with an invitation to "Set Up Your Existing Email Address" (see image). It may happen that your Mac pre-completes your full name but it would never autofill your Apple ID
